Introduction: [Collegiate Meals] Spicy Mustard Red Potatoes

I was in an inventive mood and needed a use for some lonely red potatoes. It's spicy with a hint of lemon and makes an excellent side.

Step 1: Ingredients

Red Potato
Two Onion Pearls
Lemon
Brown Mustard

Step 2: Prep and Cook

Put a pot of water on to boil - make sure it's big enough to handle your spuds.

While waiting for the water to boil, quarter your potatoes and place them in a bowl. To prevent browning, cover the potatoes with water.

When the water comes to a boil, carefully add your potatoes (but not the soak water).

While the potatoes are boiling (which will take approximately 20-30 minutes depending on size/shape), peel and mince your two onions and place into your emptied potato bowl. To this bowl, add the zest and juice of one lemon and put aside.


When the potatoes are done, drain the water and leave the potatoes in a strainer to dry. Place the pot back on the burner and add your onion/lemon mixture. Sweat your onions - which means, cook until they begin to turn clear (this will take the onion edge off without bringing too much sweet flavor in). Now add your potatoes and enough mustard to lightly coat. Mix well.

Step 3: Serving Suggestions

Any dish that goes well with potatoes works well with these potatoes - especially if you like/need to spice up your meal.

Garnish with some coarse shavings of Parmesan cheese or Reggiano left over from your Awesome Burgers.
